Corn ‘N Oil

Corn 'N Oil

Someone ordered this drink for me a few years ago in Florida, claiming I would love it. Two sips and I was hooked. Corn ‘N Oil is a Caribbean drink with completely unknown history. Rich and sweet, blackstrap rum is the star of this drink. The easiest to find blackstrap rum is made by Cruzan. Joined by lime, it also utilizes one of my favorite secret ingredients, Velvet Falernum.

Here in the good ol’ USA, John D Taylor’s formula is fairly easy to find at most liquor stores. It is a sugar cane based liqueur flavored with lime, clove, ginger and almond. Great for sweetening, falernum is also available in a non-alcoholic form from Fee Brothers.

Equipment: shaker, strainer and rocks glass

2 ½ oz blackstrap rum (If you want a little less sweetness, use a good dark rum)

½ oz John D Taylor’s Velvet Falernum

3 dashes Angostura Bitters

2 wedges lime

Combine rum, falernum and bitters in shaker with ice and shake vigorously for 10-15 seconds. Strain into rocks glass with fresh ice and squeeze one wedge of lime on top. Garnish with second wedge of lime.
