We called this drink the Viking voyage quite simply because its what we imagine a Viking would have imbibed should they have wound up in the Caribbean! I swear naming cocktails is sometimes harder than coming up with recipes. Side note, Luxardo is a phenomenal way to add sweetness to a drink without overpowering the underlying spirit flavors.
Ingredients
Equipment: shaker, strainer, old fashioned glass, large ice cube or sphere
1½ oz rum (Rhum Barbanacourt is the favorite in our house)
1 oz apple juice
¼ oz Luxardo Maraschino liqueur
2 dashes Scrappy’s orange bitters (they’re really worth the investment, I can’t rave about this brand enough)
1½ oz ginger ale
Apple slice or ring for garnish
Instructions
Combine rum, apple juice, Luxardo and bitters in shaker with ice. Shake for 15 seconds and strain into old fashioned glass over large ice cube or sphere. Top with ginger ale and garnish with apple. Cheers!
