Meyer lemons have a bit of a bad rap behind the bar these days. They taste like a cross between a traditional lemon and a sweet mandarin orange. For too long this poor fruit was forced into simple syrups with so much sugar, the fantastically bold flavor would be over shadowed by cloying sweetness. In this beverage they take center stage and have a strong supporting cast of ginger, cassis, vodka and Prosecco!
Ingredients
Equipment: shaker, strainer, coupe or martini glass
¾ oz fresh Meyer lemon juice
1 oz ginger liqueur
1 oz vodka
¼ oz crème de cassis
Prosecco
Twist of Meyer lemon for garnish
Instructions
Combine Meyer lemon juice, ginger liqueur, vodka and crème de cassis in shaker with ice. Shake with gusto for 10-15 seconds and strain into coupe or martini glass. Top with chilled Prosecco and garnish with a fresh twist of Meyer lemon. Cheers!
